Family-Style Mamma’s Eggplant Parmigiana

One of my favorite meals! I bake seasoned slices of organic eggplant until crispy and layer them with homemade tomato sauce, sautéed bell peppers, fresh basil, farm fresh mozzarella cheese and bake it until the cheesy is gooey and the eggplant is tender!

Sides include large simple salad and slices of garlic & herb sourdough bread
